What’s for dinner?

Sometimes, my friends and I get into a “meal rut.” You know, where you start planning the same things every week for dinner. We’ll usually send a text to see what everyone’s making to inspire some fresh ideas.

I do our meal planning every Sunday and then David does the shopping. (We always did grocery pickup, but they have messed up so many orders lately, we’re taking a break from that.) Planning ahead saves us so much time and stress. I figured I’d start sharing my weeknight dinner schedule here, in case other people were running into the same planning fatigue and wanted to check out some yummy, easy meals!

I am an allrecipes.com addict. I swear by that site…it’s where I get most of my recipes from.

Sunday: Apple Butter Pork Loin

It is delicious! I serve it with mashed potatoes. It takes some time in the oven, so I save it for Sundays.

*Make sure you get a pork loin and not a pork tenderloin. They are different cuts of meat. If you get a tenderloin, you need to reduce the cooking time in this recipe.

Monday: Turkey and Sweet Potato Chili

This dish is healthy and yummy! We fell in love with it when my friend brought it over when one of the kids was born. You can find the recipe here: Recipe

Tuesday: Slow Cooker Cilantro Lime Chicken Tacos

This is the easiest meal ever. You throw 5 ingredients in the crock pot and leave it. Bam, instant dinner even the kids love. You can find the recipe here: Recipe

Wednesday: Greek Lemon Chicken and Potatoes

This is a Chef John recipe. If you don’t know Chef John on Allrecipes, get to know him. The man NEVER steers me wrong with his food. It is so flavorful. This dish is SO easy to make! You can find the recipe here: Recipe

Thursday: Easy Slow Cooker French Dip

The name says it all and the entire family loves it. I like to add provolone cheese to the sandwich and serve the sauce as au jus. You can find the recipe here: Recipe

I usually leave Friday and Saturday open, as we like the flexibility on the weekends. I hope this gives you some ideas. If you all have any you’d like to share with me, please do! There is nothing like the moment you realize you have served some version of stir fry almost every day of the week and need to spice things up a bit.
